Flank Steak over Fresh Arugula Salad

This is one of my husbands all time favorites!!! It's packed with serious flavor and he gets his "beef fix" fulfilled! You must try this, it is so simple and deliciously lean!


Ingredients

Steak Marinate Ingredients:

1 lb flank steak
1 tbsp orange juice
1 tbsp soy sauce
1 tbsp organic balsamic vinegar
1 tbsp extra virgin olive oil
1 tbsp fresh rosemary, chopped
dash of salt and fresh ground pepper


Salad Ingredients:

4 cups organic baby arugula
2 tbsp organic balsamic vinegar
dash of fresh ground pepper


Directions

1. Place flank steak into a ziplock bag and whisk all steak marinate ingredients together. Pour marinate over flank steak, place steak in refrigerator anywhere from 6 to 12 hours or overnight for a more intense flavor.
2. Remove steak from refrigerator and wait until it comes to room temperature.
3. Preheat gill on high heat, cook 4 minutes per-side. This will result in a medium-rare temperature (Extend cooking time an extra minute per side for a more well-done temperature).
4. Wait at least 5 minutes to cut your steak against the grains into long thin strips.
5. Place steak slices over beds of organic baby arugula salad and drizzle with organic balsamic vinegar. If desired, top with fresh ground pepper.
