Pick up a rotisserie chicken from your local market and assemble this delicious sandwich for a quick and easy weeknight or weekend meal the whole family will enjoy!

2 tbsp extra virgin olive oil
2 tbsp organic balsamic vinegar
¼ tsp sea salt
¼ tsp fresh black pepper
4 cups prechopped organic hearts of romaine lettuce or salad of choice
1 ½ cups chopped skinless, organic boneless chicken or rotisserie chicken breast
¾ cup (3 ounces) fresh mozzarella cheese, chopped
½ cup fresh basil leaves, torn or chopped
1 pint organic cherry or grape tomatoes, quartered or diced
Cooking spray
4 (2.8-ounce) multigrain or wheat flatbreads (such as Flatout)


1. Combine first 4 ingredients in a large bowl, stirring with a whisk. Add lettuce and next 4 ingredients (through tomatoes), tossing to coat.
2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Working with 1 flatbread at a time, cook flat 1 minute on each side or until toasted.
3. Arrange about 1 ½ cups chicken mixture in the center of each flatbread; roll up.
